Exclusive Korean Hanwoo Beef Omakase to Debut in Dubai
Chef Moon’s creation priced at Dh620 per guest, minimum two diners
DUBAI’s St. Regis Gardens welcomes a new wave of contemporary Korean cuisine with the opening of Hanu, the city’s only restaurant to serve Hoengseong Hanwoo, Korea’s premier marbled beef.
Recognised for this rare achievement, Hanu has been appointed as the official ambassador of Hoengseong Hanwoo.
To mark the occasion, Chef Moon has curated a Hanwoo Beef Omakase menu, an immersive dining journey available from 8 October.

What is Hoengseong Hanwoo?
Raised in the pristine highlands of Gangwon Province, Hoengseong Hanwoo cattle thrive in a cool climate with pure water and fresh mountain air, resulting in beef renowned for its distinctive taste. Managed under the strict oversight of the Hoengseong Livestock Cooperative Federation, the beef is globally prized for its exceptional marbling, melt-in-the-mouth tenderness, and rich umami flavour.

Only the highest-grade cuts are selected, making Hanu’s offering a showcase of Korean gastronomy at its finest.
How is the Omakase presented?
Chef Moon’s Hanwoo Beef Omakase, known as "Hanwookase", is designed as a narrative of flavour and tradition. Diners begin with Juansang, a series of elegant appetisers. Highlights include Yuksu, a warm Hanwoo beef broth; Hobakseon, zucchini carpaccio; Yukhoe, the classic beef tartare; Saeu jang, marinated red prawns; Crispy Cow, presenting Hanwoo in a playful light; and Mushroom Bulgogi, embodying earthy, charcoal-grilled richness.

The centrepiece, Meat Me at the Grill, showcases premium Hoengseong Hanwoo 1++ striploin, tenderloin, and ribeye, alongside Yangyeom Galbi, short ribs in a savoury soy-based marinade. Accompaniments include seasonal Ban Chan, Scallion Salad with gochujang vinaigrette, Egg Soufflé, and hearty stews with rice, such as spicy kimchi or Japanese A5 brisket soybean. Desserts are available separately, offering guests the chance to personalise their finale.

The Hanwoo Beef Omakase will be served exclusively at Hanu from 8th October, priced at Dh620 per person, with a minimum order for two guests.

Presented on a meticulously curated tray, the courses are designed to enhance the storytelling of the dining journey. The experience is set against the backdrop of Hanu’s contemporary Korean-inspired interiors, blending elegant aesthetics with warm hospitality.
